Safety Recipe of the Week: Kidney Bean Salad
I suppose every town has that certain place that never changes – the food is great, the décor is something out of the 60’s and it’s sort of a “destination”. Denver has one, called the White Fence Farm. Here is a blip from their web page and it’s true. “The place in Denver, Colorado for the best chicken dinner and family entertainment! Come in, get a number and go see the farm!” (The number is on a plastic egg)
“Whether it is a meal for two or your whole extended family, White Fence Farm not only serves the best chicken, but T-bone steaks, shrimp, and much more. Don’t forget about our farm fresh desserts available in the restaurant or in Granny’s Sweet Shop.” (Jeff loves their cherry pie) They also feature live music every night in the “Americana Barn”, if you are feeling so inclined.
The White Fence Farm serves all the sides family style and I think they have the best kidney bean salad. Here is the recipe, hope you enjoy!
3 (16 ounces) cans red kidney beans, drained & rinsed
1/2 cup finely chopped onion
1 cup chopped celery
1 cup mayonnaise
1 tablespoon red wine vinegar
1⁄4 cup sweet pickle relish, drained
1 pinch sugar
salt & pepper
Mix mayonnaise, oil vinegar, sugar, salt and pepper.
Add onions and stir well.
Then add the celery, beans and relish.
